Yes, I know it’s already the 13th of February. Valentines day is already right around the corner and you might not have a lot of time to prepare something time consuming for your loved ones. Still want to show them that they have a special place in your heart? What better way to do this with this quick and healthy, but most of all delicious fruity treat!
PS: Tastes amazing also on every other day of the year haha 😉
Here’s what you gonna need for a 23 cm Ø pie pan:
For the dough
50 g protein powder (I used this one)
100 g spelt flour
50 g whole wheat flour
approx. 1 Tbs of applesauce ( the one from Alnatura is without any additional sugar)
For the filling
750 g full or semi fat curd cheese ( I used full fat since the recipe is already very low on fat and it tastes a lot creamier 😉 )
raspberry fruit powder ( You can get it in any supermarket with a baking department)
sweetener of choice (I used a liquid one which didn’t contain Stevia since I think it has a weird and bitter taste to it)
30 g (2 sachets ) of instant gelatin
2 handful of dried cranberries
handful of dried coconut
Directions:
1. for the dough mix all the ingredients first with a spoon. Once you think the dough gets too dry, start using your hands. You have to be veeeery patient with the dough. In the beginning you think its way too less liquid ingredients, but believe me you just have to work the dough together long enough until it forms a nice and soft ball. Its very hard on your hands after some minutes of kneading, but thats the key to it: don’t stop ! If after approx. 5 minutes you still get the impression that it is too dry, start adding tiny bits of applesauce. And by tiny, I mean tiny! So keep on working till you get a dough just like on the picture above.
2. wrap the dough in clingfilm and put it in the fridge for an hour
3. after an approx. an hour, take it out and flour your countertop. Roll out the dough in a round shape
4. Press the dough into the pie pan and stab the bottom of it with a fork to prevent it from raising too much whilst baking.
5. Put the dough into the oven for approx. 10 minutes on 180 °C.
6. Once you take it out, the dough should be lightly crunchy, but not as hard as a cookie.
7. Let it cool completely before you move on with the filling.
8. For the cream filling just simply whisk together the curd, sweetener and raspberry powder. Taste and add sweetener or raspberry powder until you get the desired intensity.
9.Add the gelatin and whisk it in with a hand mixer for 2-3 minutes on high.
10. Fold in one handful of dried cranberries.
11. This step is optional. If you have fresh raspberries on strawberries on hand, cover the bottom of the taste with em.
12. Pour the cream into the pre baked tart dough, even out the surface with a spatula and decorate with the rest od the cranberries and coconut.
13. Put the tart in the fridge for at least 5 hours. ENJOY!
