Quick tip: High protein cheescake bites

As it comes in really handy, I want to continue with the „quick tip“ recipe series. Clear instructions for you, less time investment for me. So, here we go, I guess everyone loves cheesecake in a way and this one is the perfect combination of a light, fluffy and fruity treat to satisfy the occasional sweet tooth.

Ingredients for one baking tray

800 g low fat curd
400 g low fat cream cheese (Exquisa/Philadelphia, both light version)
40 g vanilla pudding powder
20 g of vanilla protein powder (optional)
80 g egg whites (you can save the egg yolks for other dishes or use 1 whole egg and 3 egg whites)
200 g canned tangerines
a pinch of salt
1 tsp of baking powder
sweetener of choice
zest of one lemon

Directions

1. simple as that: just mix together all the ingredients except the tangerines
2. cut half of the tangerines into little pieces and fold in the dough mixture
3. pour the dough into a previously greased baking tray and place the other half of the tangerines evenly on top
4. bake for approx. 30-40 minutes at 170 °C , depending on the size of your baking tray. Once the edges turn lightly brown and the dough firms up, it’s done!
5. slice into pieces of the size of your choice (I sliced them into little praline shapes)
6. serve and enjoy!
